Recipe for Banana akara - african banana fritters


Banana Akara (African Banana Fritters)

6 well ripened bananas
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup water
1 teaspoon nutmeg

Mash bananas with a fork or use blender to make into a pulp. Add flour.

Mix water and sugar to make a syrup. Add syrup and nutmeg to bananas and flour (add more water, if needed, to make batter to pancake consistency.) Mix well. Fry like pancakes in oiled frying pan until golden brown.

Makes 24 small pancakes.

I have just gone through the Banana Akara receipe. As far as I know all forms of akara, be it from beans, banana, cassava, rice, etc, are deep fried. I dare to say fritters are deep fried too. So, to say banana akara should be fried like pancakes is misleading to those who have never seen it done and would wish to try. If the ingredients are mixed to a pancake consistency, by all means, fry them as pancakes.
If you do not succeed then, experiment by adjusting certain ingredients to get the right consistency that would give you the desired results. Just like you would do with a simple pancake receipe!!!!! Bonne Chance et Bon Appetit
