Looking for a good catering service in LA? What makes a good caterer anyway?
It has to be more than just the food, said Roozbeh Farahanipour, owner of Delphi Greek in LA.
"Of course you want great food. But you must have more than that. You need a catering service that is responsive to your needs and provides quality beyond what is served to your guests," he said.
Mr. Farahanipour said the top thing to look for is attention to detail. If the little things are covered, the customer can be certain the big things are covered.
He likened it to the Van Halen rock band's concert contract. The contract says the band must have a bowl of M&Ms backstage with no brown candies. On the surface that sounds like it doesn't make sense.
"It's not about the brown M&Ms. It's about the attention to detail. If the band shows up and has brown M&Ms, experience has taught them that they are going to have a lot more problems, including big problems with everything at the concert location," he said.
As David Lee Roth said, "So, when I would walk backstage, if I saw a brown M&M in that bowl … well, line-check the entire production. Guaranteed you’re going to arrive at a technical error. They didn’t read the contract. Guaranteed you’d run into a problem. Sometimes it would threaten to just destroy the whole show. Something like, literally, life-threatening.”
Obviously a stray M&M is not a major cause for concern to someone who can eat M&Ms, but the same can't be said for catering large events. Mr. Farahanipour said a small detail like religious requirements for the food, a food allergy or even gluten may seem like a small issue, unless you are one of the people affected by that requirement.
"We take pride in paying attention to the smallest details. That way you know you are getting exactly what you ordered and you are getting exactly what you expected. That's the only way we know to do business," he said.
