Gazpacho Smoothie1/2 cup peeled and chopped cucumbers 1/2 cups chopped tomatoes 1 shallot, pureed 1/4 cup chopped bell pepper 1/4 cup V-8 juice 1/2 cup carrot juice 1/2 cup pineapple yogurt or sour cream In a blender place cucumbers, tomatoes, shallow and bell pepper and blend at high speed. Add V-8 juice, carrot juic and yogurt. Blend with vegetables until smooth. Serve in a glass.
