Zucchini cocoa brownies


Zucchini Cocoa Brownies

2 cups grated zucchini
1/2 cup chopped nuts
2 teaspoons vanilla extract
1/2 cup oil
2 cups all-purpose flour
1 1/4 cups granulated sugar
1 teaspoon salt
1 1/2 teaspoons baking soda
1/2 cup cocoa
1 egg, beaten

Combine zucchini, nuts, vanilla extract, oil and eggs. Add remaining ingredients and mix well. Bake in greased and floured 13 x 9-inch pan at 350 degrees F for 40 minutes. Frost while hot.

Chocolate Icing
1/3 cup margarine, melted
2 squares chocolate
1 1/2 cups confectioners' sugar
1 egg, beaten
1 teaspoon vanilla extract

While brownies are in oven, put margarine, chocolate and egg in double boiler over low heat and stir until melted. Add vanilla extract and sugar and mix well, while still over hot water. Spread on brownies while still hot.

I loved this recipe however I changed quite a few things. I used 1 cup brown sugar and only 1 tsp baking soda. I also used a pre-sweetened fair trade cocoa with chilis. So good. Almost like something you would find in finest of bake shops.
