Twice baked sweet potatoes


Twice Baked Sweet Potatoes

8 medium sweet potatoes
1 cup miniature marshmallows
1/2 cup (1 stick) butter
1/2 cup chopped pecans
1/2 cup raisins
Salt and pepper

Bake sweet potatoes until they are soft but not mushy. Cool and scoop out center, leaving enough potato to hold the shape of the skin. Mix potato with all other ingredients. Refill skins and bake for 30 minutes at 325 degrees F.
